Halloween Fun: Day 24- Pumpkin Bread

Thanks to my sweet cousin Rebecca, I have been introduced to this glorious pumpkin bread recipe!  I am hooked.  I tripled the recipe because I was so excited for it.  And I'm glad I did because I only made it three days ago and it's already 75% gone...

 I also tried a silicone loaf pan for the first time and I didn't realize how misshapen it would make the loaf.  Kinda entertaining, actually.  I guess this kind of recipe (more of a batter than a dough) is better in just a regular pan, but it still worked out great and tasted delectable.  Since I baked all three at once, it did take a bit longer than the hour on the recipe, but probably only 10 minutes more.
